Buy Fresh Seafood & Meat and have it cooked on the spot
Posted at Sunday, 27 November 2005, 12:32 AM, Categorised as Business Model

When I was in Pattaya, Thailand for a vacation, I stumble upon this unique business concept. I don't think this concept is implemented in Malaysia yet. Hope to share this new business concept with all.

Location : Pattaya, Thailand
Company : Tops
Company Business Nature : Hypermarket

Customer Experience
  1. Customer selects the amount of fresh meat and seafood they want to consume from the counter.
  2. The workers weight the fresh meat and seafood and charge according to the weight.
  3. Customer pays at the cashier.
  4. Customer advice the workers how to cook their fresh meat and seafood. They can have it deep fry, steam or grill.
  5. The worker start washing and prepare the food as advice by the customer.
  6. The customer comes back 20 - 30 minutes later to collect their food.
  7. The customer adds sauces and seasoning to the food.
  8. The customer grab a few beverage from the beverage refrigerator and pay at the cashier.
  9. The customer finds a seat at the food court and enjoy the food and beverages

Business Model

Ussually a hypermarket sells fresh meat and seafood as early as 8 am. At about 10 am - 12 pm, hypermarket staff will try to clear the day's stock by giving huge discounts. Instead of giving huge discounts to clear the stock, this hypermarket creatively sells their fresh meat as finished products. Their service only starts on lunch time about 12 pm. The hypermarket can maximise their profits by selling at a premium price per Kg as the price is still cheaper compared to ready cooked food available outside. Besides the way they process the fresh meat and seafood are limited to deep fry, steam and grill. No additional ingredients are added and no skillful chefs are needed to process the food. The best part is the customers appreciate this service and treat it as value added services.

Visitor Message

yes, there is... (or something like it) I'm surprise to have found it myself, or more correctly, my girlfriend brought me there... (and her co-workers introduced the restaurant to her) -- it's called Marche (swiss name if i'm not mistaken), located at the Curve (next to IKEA Mutiara Damansara). In the US, or more specifically at the Great Lakes Mall of Pontiac (near Detroit), there's this modern chinese restaurant called Stir Crazy which I totally like. It doesn't have a whole market to shop for cooking, but you get to pick the ingredients and amount (for vegetable only, not meat/seafood) for your meal, and have the cook stirring the ingredients right in front of you. The cooking setting is really clean, with constant running water... and you can only blame yourself if the result is too spicy, salty, sweet etc. would be great if we have more of these in Malaysia. - Nasir, 20 March 2006 2:37 AM
